I would go all the way and go for a DSLR camera from Canon or Nikon (these two brands have the most models available in the second hand market). A 5-7 year old camera has excellent quality and is dead cheap. Get a cheap 50mm lens and you are set for pretty much anything. The learning curve is steeper, but the reward is bigger. £100-200 will get you far in the second hand market.

I bought a Sony A100 DSLR many years ago (not considered a great camera) and its still my only camera. Never had any problems with it and it does a decent job - although I still know very little about photography.

I've learnt to take photos in RAW format so that way you can use a data converter programme on a computer to change exposure, white balance, contrast, etc, etc to improve the image to your liking and then export it as a JPG once you're happy.
Sounds more complicated than it is, but its easy once you get used to it.
As an example: Some of my pics are taken in the evening and the only lighting is a light bulb in the room. As a result of the crap lighting the dolls skin looks yellow. This can be fixed in an image converter programme by changing the white balance value.

So for me its been a learning curve of how to deal with photos after they're taken. I'm not skilled enough or have the time to set up lighting and take nice photos first time.

My novice tips are:
Get something with a good sensor (read reviews of camera)
Decent make of camera that comes with a half decent lense
A cheap tripod helps a lot in low lighting to stop picture blur (use the 10 sec timer)

There are many very decent used cameras that are pretty cheap so you will have lots of choices. Good luck.

Maybe I'm late, but I want to add some.
Most zoom lenses suffer from distortion in the minimum (wide) and maximum (tele) focal lengths. To the doll itself it doesn't matter much, but lines in the background that should be right become curved. To me, that's disturbing when I take wide-angle pictures. I own a 8 years old Fuji superzoom, nothing wrong with the camera except the distortion. I only use it for telephoto now. Wide-angle pictures are now taken with my Sony smartphone, which has a distortion-free wide-angle lens. The rest of the camera is very good as well.

Yes

A 50mm lens set to f2 or f1.8 does brilliant things in terms of being able to defocus a background

but the simpler Fuji S9600 can produce good results.

I always underexpose with the Fuji

whilst here's the same "properly exposed" from the Nikon

The camera and handling exposure are intertwined influences on the art.

Best wishes
